Shun Knives

Shun knives are simply the finest Japanese knives on the market (unless you have them custom-made!). Although they're little-know in the UK, they've a phenomenal reputation in the US and sell in their thousands, despite the price. The range is composed almost entirely of double-sided blades in the Western tradition, although there are single-edged deba and sashimi knives as well. The tremendous performance of Shun knives is derived from the blade composition of 32 layers of SUS410 carbon stainless steel folded around a core of V10-Gold high carbon blade steel. V10-Gold is a relatively new grade of high density steel with a 1% carbon content (double that of Global, Wusthof and most others). It permits the crafting of exceptionally sharp edges that are also easy to sharpen. Meanwhile, the real purpose of the beautiful damascus steel is to act as a shock absorber and to provide flexibility in the knife. The build quality and finishing of these knives has to be seen to be appreciated (and we see lots of high-end knives!). The handles are composed of laminated pakka wood that's resin-impregnated to make it water-resistant. The handles are finished with a polished stainless steel ferrule and cap. Part of the cutting performance of these knives is due to the highly-polished edge and lower blade treatments. It's therefore important that you use a whetstone to maintain the performance and visual appeal. We tend to use Japanese ceramic stones of about 1000 grit for sharpening and 5000-8000 grit for polishing. Shun knives are factory-finished to 16 degrees from vertical on each side.
