Senkou is a brand new range of knives from the famous Tojiro factory in Japan. The most striking feature of these knives is the beautiful Damascus steel blade. These blades are the genuine article and have been crafted from repeatedly folding layers of softer steel around a very hard core (acid-etching is sometimes used to simulate the comestic finish). This process had its origins in Syria, but has been perfected by Japanese swordsmiths and knifesmiths over several hundred years to create a tool that holds a razor-sharp edge, whilst being sufficiently flexible. These are probably the finest knives we've ever used.
