Kai Wasabi Knives
New to the UK, Kai's Wasabi range of kitchen knives are already well-respected in the US, where they routinely receive praise from professional chefs for their combination of high-quality materials and value-for-money.
The blades are constructed from Daido 1K6 high-carbon stainless steel and hardened to 58 Rockwell C (this is a higher blade specification than many knives costing twice as much). The handles are an unusual mixture of powdered bamboo, polypropylene and an anti-bacterial agent that makes the handle hardwearing and very suitable for use in professional kitchens.
The handles are moulded onto the blade tang to create a water-tight and tough joint.
The range is essentially a traditional Japanese range that focuses on shapes such as deba, sashimi and nikiri (usuba). Of course, many of the knives in the range are single-sided to provide the precision and straighness associated with Japanese prepping techniques.
Sharpening of these knives should be done using a whetstone.
