Wusthof Classic Ikon
The latest range to be developed by Germany's Wusthof is a major development for this family-run company that maintains its position as one of the World's great manufacturers of professional kitchen knives.
Made entirely in the Solingen factory, the Ikon brand has been introduced as a response to the explosion in demand for top-end knives that exhibit both traditional craftsmanship and leading-edge ergonomics.
Much of Ikon's development has been informed by Wusthof's established understanding of their customers' exacting needs, but with a recognition that the introduction of super-premium Japanese knives to Western markets has brought new ideas to the notion of the 'ideal' knife.
For now, Wusthof's Ikon range is the finest illustration of modern European knife-making and is one of the top 2 or 3 knife ranges on the planet.
In common with more traditional Wusthof ranges, Classic Ikon knives are precision-forged in one piece from a single billet of high-carbon surgical steel. Each knife undergoes over 30 processes, including extensive hand-finishing, before it leaves the factory.
The unique features of Ikon are the partially cut-away bolster (for whetstone sharpening), ergonomically-shaped handle and rear-weighting. This latter feature alters the balance and gives the impression of more 'weight' in the cut. The handle grip is also set further back from the bolster, which allows more freedom in using the whole length of the cutting edge.
Overall, these changes create knives that are a pleasure to hold, but feel very dynamic in use.
